I am arriving at terminal 4
I am arriving at terminal 4 on 6 Nov at 14h15 with flight EK 201 from Dubai. I have a connecting flight at 16h30 with US airlines to Phoenix, I believe this departure is at terminal 7. Will the 2 hours 15 minutes be adequate time to collect my luggage and check in for the connecting flight. What will be the easiest and quickest way to ensure I do not miss the conecting flight.

The time window should be enough for you to transfer. At T4, after passing the customs, go to the third floor and take any Airtrain on track 1 . The second stop would be T7.

Airtrain, subway, LIRR,
Airtrain, subway, LIRR, Amtrak run 24/7. Take Airtrain from your terminal to Jamaica Station, then take either E subway or LIRR to Penn Station. At Penn Station take NJ Transit or Amtrak-NE Corridor train to Trenton. Amtrak is $37 one-way and takes about one hour. NJ Transit is cheaper but takes longer, makes lots of stops on the way.
