I will be arriving on a BA flight from London into terminal 7 at 22.40. I will then need to get to terminal 1 for an AeroMexico flight which leaves at 00.45. Does this leave me enough time to go through immigration and re-check my luggage? How long does it take from terminal 7 to terminal 1 and how do I get there?

At that time of the day/night you will clear customs/immigration faster. The time window that you have is sufficient.
You have to go across the street from T7 and upstairs where you can take Airtrain on track 2. Terminal 1 is four stops away(~5min ride).

I'm touching down 7:10am at JFK by Cathay Pacific. If my flight to Toronto departs at 11:05am by LAN airlines, will there be sufficient time to clear customs, immigration and collect luggage before checking in for LAN airline as its website said to check in 3 hours earlier? And how do I move from terminal 7 to terminal 4? Thanks.

You have plenty of time to transfer.
You have to go across the street from T7 and upstairs where you can take Airtrain on track 2. Terminal 4 is two stops away(~2min ride).

I didn't word my question very well. My traveller is arriving on a red-eye (7:05am) from Vancouver into Terminal 7, then will be departing from Terminal 5 on a Jet Blue flight at 12:35pm. I am looking for an airline lounge for him to freshen up between flights. So am wondering if there are any lounges after he clears Customs & Immigration in Terminal 7.

All the lounges are behind security at T7 and he won't be able to use them. Jet Blue does not have a lounge. He can go to T4(via Airtrain) where there are various lounges available for use.

Unless you are arriving in the same building, you have to go through security.

I will arrive from Europe at JFK Terminal 7 on Oct.21 at 7:10pm and I have a flight connection to DCA at Terminal 8 at 9:15pm. What do I have to do with my luggage? And do I have enough time to catch the flight at another terminal?

You have to collect your bags immediately after you pass US immigration , go through US customs with them and then re-check them in at the connecting flights counter for the airline that brought you in at JFK.
You have time to do that.

My boss is flying from HK and landing at NY Kennedy terminal 7 on Oct 18th 13:10 hours and he will need to catch AA1787 at termainl 8 at 16:30 hours. Can you walk me through how he can get to terminal 8 and how long does it take? Also, does he need to take his lugguage out in NY and then check them in once again? Is there a bag re-check belt so that he won't have to haul all his bags over to terminal 8?

He has to re-check his bags at connecting flight counters immediately after customs at T7.
Then he has to go across the streets and up on the third floor to catch Airtrain(on track 1) to Terminal 8. It is only 1 stop away(~1min ride).

There is a connecting flights counter after he exits customs, but be sure bags are checked to final destination and he has the AA boarding pass or else he will need to take bags with him to check-in at AA. He can take AirTrain on track 1 one stop from T7 to T8.

My boss is going to take the DL3113 arriving JFK Airport from Washington tomorrow evening to catch a CX flight back to HK.

May I know how he can get to the correct counter / gate? I cannot find detailed map on the website.

Take Airtrain on track 1 from Delta terminal 2/3 to terminal 7. He will then go to the CX counter to check in, the departure gate will be on his boarding pass and posted on the electronic flights board.
