I will be arriving from
I will be arriving from Austin to JFK with jetBlue (ETA 5:17 pm - I'm guessing terminal 5) and continuing to Europe (Budapest) with a Delta flight (ETD 7:40 pm). Would this time be enough to go through all troubles in order to reach the other flight? (I am not quite sure which one the departing terminal will be for the Delta flight, but most likely T3.)

We have a client arriving at
We have a client arriving at terminal 5 on Jet Blue 670 at 3:23 pm and departing on Aeroflot 316 that departs from terminal 1 at 7pm. Will she have time to pick up her baggage at the Jet Blue baggage claim area, check it in again at the Aeroflot check-in counter before 6pm (the counter closes at 6pm), pass through security, find terminal 1 and her Aeroflot gate and board the plane?
Is there a recommended minimum connecting time between terminal 5 and terminal 1 that includes re-checking in the bags?

Your client has lots of time
Your client has lots of time to connect. From terminal 5 take an air train on track 2 to terminal 1. Connecting time is about 2 minutes.
