Right after you pass customs you have to clear security again before you go to the second floor where the departure gates are. Everything that is in one building though.

It is very tight given the fact that you are arriving international - you will have 20-30 min in customs. The good news is that Virgin is located at the same terminal.
Yet, I consider that too risky - see what time Virgin has their next flight to your final destination. Just in case.

Luggage
I am arriving Terminal 4 on Wed. the 24th on El Al from Tel Aviv and have to trnasfer to Terminal 8 to catch my connecting flight to Toronto on an El Al flight operated by American Airlines - Will I have to pick up my luggage and transfer it to Terminal 8 and do check-in agian or will it be automatically transfered to m next flight?

You have to pick up your luggage at T4 in order to go through US customs with it. Then you have a choice:
-either transfer it at Connecting flight counter for El Al at T4;
-or take it with you to Terminal 8 and check it in there with AA.

Connection time, international arrival T4 to domestic T7 in 1:20
I know I'm cutting it close but is it even possible to do international arrival (on VS) at T4 (US citizen, no checked bags) and make it to T7 domestic (US) in 1 hour 40 minutes?
There are no alternative later flights on the same airline. Am I crazy to try this?

It depends how busy it will be in customs at the time of arrivals. What time you expect to be at JFK?

Arriving at 4:40 PM on a Thu at T4 (VS 45 from LHR). Connecting to US 373 in T7 at 6:00. Looks like I did my math wrong -- only 1:20 b/t flights.
I did find a backup at 7:30 PM on US out of LGA.

At that time is REALLY busy at Terminal 4. In normal circumstances one hour and 20 minutes is not enough to transfer from international flight at JFK. You will have at least 20-40 minutes until you clear immigration and customs and another 10 minutes to get to T7. I doubt it that US will still check in that close.
May be your backup plan will work better - grab a taxi from JFK to LGA - it will take you no more than 20-30 min. to get there.
