You won't be able to use CAD
You won't be able to use CAD at JFK. Yet , there are exchange places(called Travelex) throughout the airport where you can exchange CAD into USD.

Air France is usually terminal 1. Take AirTrain on track 2 from T1 to T7.
Air France flights operated
Air France flights operated by Delta will arrive in Terminal 2/3. Take ANY air train to Terminal 7. Air France does arrive Terminal 1 but Delta flights arrive Terminals 2/3 (they are the same place). I work at JFK so you can trust me:)

East Side or West Side? There are stops across 23rd St on five different subway lines!! Take AirTrain from your terminal to Jamaica Station, transfer to E subway; for the West Side stay on the E to 23rd St (@8th Ave), for the East Side transfer from the E at Lexington/53rd to the downtown #6 to 23rd St (@Lexington Ave). You can walk down to 21st St for points in between
